Steven, we'd love to help with this, but we're not sure which recipe you're referring to (which will make a difference in how long you can keep the levain). Usually recipes specify how long you can keep the levain at room temperature, and sometimes you can get by if you store the levain in the fridge overnight. The dough might loose some of its lift if you do this, so if it's just a small amount of water and flour then you might want to start again.
