Hi Elle! The smell was likely different because, as with any fermented item, the bacteria can be different from one batch to another. It can change depending on the temperature, the environment, weather, particles in the air, or any number of factors, so batches can vary and it's quite common for salt-rising bread in particular to have a very pungent smell.
