I have learned to search for corn meal that contains plenty of 'germ'. De-germinated corn meal does not rise well. I have used a large glass jar surrounded by beans rather than salt for holding in the warmth, turning on the stove burner every now and then to maintain the heat but, alas, the bottom of the jar broke with my most recent batch of salt rising bread! It was a clean break and didn't lose much liquid so continued the process and had good results. I shall try the oven next time!
