I was just going to state that the bacteria in salt rising bread are supposed to be C. perfringens when I saw that you had found that info. C. perfringens can cause blood poisoning and also can cause fairly severe digestive upset. Definitely not a dough to lick off your fingers. As a microbiologist/microbial ecologist I find this fascinating, but if you don't like bacteria (or to think about bacteria when eating, then you might not want to read the above article. And yes, someday I would like to sample salt-rising bread. I'm not certain that I want to go to the trouble of making it, but I'll see. . .
