Hi Sara- In this particular recipe, the more "natural" the cornmeal, the better chance you have of getting it to produce a good starter. It doesn't have to include the germ, but using an organic cornmeal will probably work better than a typical supermarket off-the-shelf brand. The cornmeal we sell through our website would work well for that recipe if you are still looking for a suitable product. Happy Baking! Jocelyn@KAF
