I had 2 successes with the light in the oven out of a bazillion tries so I bo't a proofing box. Now I have had 3 straight successes at 106 degrees. I use a starter of 1C flour, 1C lukewarm water and 2T stoneground cornmeal. I kneaded it in the bread machine. At 3 hrs in the second rising I put the pans in the oven. The bread was level with the pan, slightly higher in the middle. In the oven it rose about 1.5 inches more and was close to splitting along the side.Where did I go wrong? Over kneading? Over proofing? Shaping? I could send you a picture but I don't know how. Grateful for any ideas you might have. They sure smell good. P.S. I love my King Arthur proofing box, my King Arthur bread machine, and my new King Arthur loaf pans.
