My starter isn't quitr ready for the next step. If I make the second starter (sponge) and have to be away from my house for five hours, will that be too long to wait to do the loaf stage? Need a quick response. If you can address whether letting things sit in their heated environment longer than it says is a risk, I would be grateful! How important is the timing?
