David, I had a recipe once using grated potatoes, too - and I lost it, too! Why not just give it a try with 1/4 cup grated potatoes taking the place of the cornmeal in this recipe? And the light bulb in my oven seems to work for me; another small enclosed space would be your microwave, if you can somehow get a light bulb in there and still seal the door pretty securely to trap the heat...
