Last year I found a new way to make Christmas cut out sugar cookies using parchment paper. After dough is made, while still at room temperature, flatten the dough with your hands and place on one piece of parchment paper. Then place another paper on top of the dough and roll. Refrigerate for an hour or more. Then take out to the counter and remove the top sheet. It should come off easily on the cold dough. Put paper back on and flip it. Now easily remove the ‘new’ top piece of parchment and you are ready to make your cut outs. Easy peasy. No extra flour. No flour mess.
