Hi Darlene, check out PJ's recommendations for baking bacon on parchment paper. She seems to get by with just one sheet, so it's possible your parchment paper isn't quite as thick and sturdy as the kind we sell. In a pinch it certainly won't hurt to use two pieces of parchment for this type of project.
