Hello Paula- That is a tricky one. Firstly, you could try rolling it out between parchment while the paper is inside a cookie sheet. You could also try sticking the bottom piece to the counter top with some cooking spray before starting, but also if you just roll back and forth from the center out as oppose to from one end to the other, it might not try to run away from you quite as much. A completely different alternative would be to try and use a pasta machine to roll out wide, long strips as well. I hope one of those suggestions helps and best of luck in your cracker baking!
