Some of the comments stating they are not getting a proper rise might be due to an error in your posts method section.
"Place the loaves in two greased 8 1/2" x 4 1/2" loaf pans.
What if all you have is a single 9" x 5" loaf pan? Well, that's fine; "
When making a single loaf, they could be using a 9 x 5 pan when the recipe is scaled for 8 1/2" x 4 1/2 pans.
