Hi, Kathryn! We can appreciate that the dough looks very tall in this photo, but it's really just the angle that it was shot from. If you were to hunker down next to the loaf, you'd see it was pretty close to one inch above the rim. There are quite a few reasons that bread may not rise as high as expected: insufficient water (due to dry conditions) or too much flour (due to heavy volumetric measuring) in the dough, old yeast, and more.
