You're welcome to increase the amount of honey and reduce the brown sugar in this dough. Two important things to keep in mind: honey is slightly sweeter than brown sugar by volume, so you might want to use less than 1/2 cup of sugar total. Also, honey has a higher moisture content than brown sugar, so you should reduce the water to 1 3/4 cup and add more during kneading if the dough feels dry. Happy baking! Kye@KAF
