Great recipe! It has become a family favorite. Fun to see that I'm not the only one who uses the "shower caps" to cover my dough while it's proofing. I occasionally had issues when covering with plastic wrap (accidently deflating a portion of a loaf a time or two) , and it seemed wasteful to chuck it after raising the bread--these totally fill the bill!
