We'd recommend going with the second option; bake both loaves now as your oven will be hot and ready to go, then freeze the second loaf after it has cooled completely. Not only is this easier logistic-wise, but it also tends to produce a better texture in the final loaf as sometimes dough that's been frozen fails to rise as high as it otherwise would have.
