Hi there,
You could absolutely turn this into a cinnamon raisin loaf. I'd say leave out the cinnamon in the bread itself so you aren't overpowering the other flavors. Try it without adding any dry milk at first, and only add it if you feel the loaf needs a bit of moisture. ~ MJ
