Thanks for the tip, T.K. - I did add some sugar, for the acidity. This time, for the sake of the picture (so everyone could see the lovely color and creamy look of the sauce), I left it on top before stirring it in, but next time I'll definitely stir it in right after the pasta is drained, as you suggest.
