Hi Karin, the Gluten-Free Baking Mix contains other ingredients aside from just the Gluten-Free Flour and xanthan gum, so you'd be taking a bit of a gamble if you make this swap. You could try reducing the baking powder to 1/4 teaspoon since the mix contains leavener, but keep in mind you'll be experimenting because we haven't tried this in our test kitchen.
