Hi!

This article is awesome and super helpful. Quick question... If I want to substitute whole wheat pastry flour for all purpose flour using grams what weight do I use? The recipe (King Arthur Oatmeal Cookies!) calls for 85 g of all purpose flour. If I substitute whole wheat pastry flour do I add 85 g of whole wheat pastry flour or do I go with 72 g (which is what 3/4 cup of WWPF would weight according to your ingredient weight chart)?
