I've made these twice using KA Measure for Measure GLUTEN FREE flour, and they are fantastic!
I followed the bar recipe exactly for ingredients but used the directions from "KA Chocolate Chip Ice Cream Sandwich Bars" for spreading in the pan and assembly. It is far more user friendly! I also used the ice cream filling recipe from the "Chocolate Chip" recipe as well. It is much easier to make and spread and is so creamy and good in these sandwiches. It also doesn't get rock hard for biting into once it's time to eat. :) Also, the cookie stays soft even when frozen, so the whole thing is easy to eat... too easy!
I'd highly recommend this recipe with my variations for someone who misses eating glutenous ice cream sandwiches -- these are better than store-bought wheat ones!
