Kathy, we recommend using our gluten-free flour in recipes that are designed to be gluten-free if it is at all possible because some recipes won't convert well even if all of the recommended substitutions are made. In this case, we have a number of options to replace the chocolate wafer cookies. You could use our Flourless Fudge Cookie recipe, or perhaps our Gluten-Free Cocoa Molasses Cookie recipe. Both will taste heavenly when sandwiching vanilla ice cream. I hope this helps, and happy baking! Kye@KAF
