i just made this recipe to take to a sandwich themed party. i substituted blue bell ice cream instead of homemade to save time. i also tried something i hadn't seen any recipes suggest--rolling the cookie dough between two layers of parchment paper. i figured what was the worst that could happen? failed cookies i had to eat? but it worked great. the top side is slightly ragged looking from peeling off the parchment paper, but the bottom side was pretty smooth, so i just put the ice cream on the ragged side. maybe if you need these to be shiny and traditional looking the bottom wouldn't be pretty enough, if you don't mind the rustic look, it saved a lot of time and made it easy to get the dough all one height. they rose just fine. just thought i'd share in case anyone else was looking for a shortcut. good cookie recipe. would work with other fillings too.
