Yum! I never thought to do the whole sheet and then cut the sandwiches. Much easier than the way I made my brown sugar ice cream sandwiches: http://thecookslife.wordpress.com/2013/05/06/brown-sugar-cookie-ice-cream-sandwiches/ I'll be trying chocolate ones soon, for sure!
