These look really yummy!! I just got a Cuisanart Ice Cream maker this summer and I want to try the vanilla ice cream recipe. Love the idea of making homemade sandwiches! Just curious, could you use a silpat instead of parchment paper for baking the sandwich cookie? I would stick with the parchment since silpats tend to insulate the cookies and prevent them form baking correctly. ~Amy
