Hi there, Keli! We don't recommend converting yeasted recipes to be gluten-free, because without the gluten the flour doesn't create a strong enough structure to go through two longer rises and makes for a fairly dense and flat baked good. You might consider using the quick puff pastry from our Gluten-Free Blueberry Hand Pies recipe to make some gluten-free danishes.
