We just went to Keto, and my father is diabetic. He's coming for a visit over his birthday week and has declared he does not like the taste of gluten-free and does not want a GF cake. I want to make a Vanilla cake with chocolate icing. I found some recipes to follow but I'm wondering if you have recommendations on texture. I recently tried pancakes for the first time but they turned out grainy (a mixture of coconut and almond flour) I'm worried any cake I make will turn out the same. TIA!
