Hey Renee! Chilling the dough in the fridge does help, but another thing that helps keep the dough tender and make it easier to roll? Milk! The best recipe I've found, by far, when made gluten-free with our Gluten-Free Measure for Measure FLour is our Rustic Milk Pie Dough. Made by hand or, even easier and faster, simply by mixing it up in a stand mixer, the milk creates a super tender dough that is pliable enough to roll and even create a lattice with. I hope you'll give it a go!
