Hi there, Susan! We haven't found tapioca flour and xanthan gum to be compatibly interchangeable as xanthan gum has more structural benefits when compared to the thickening benefits of tapioca flour. Some things you can substitute for tapioca would be cornstarch; (1 Tbls cornstarch for every 2 Tbls tapioca,) potato starch; (1 Tbls potato starch for every 2 Tbls tapioca) or arrowroot; (1 Tbls arrowroot for every 2 Tbls tapioca.)
