I have a recipe that calls for tapioca flour as a thickener and I want to use xanthan gum. (1) What is the conversion for that? (2) Would I go with that conversion to add to the cup for cup gluten free flour mix that I am making myself, or is there a specific ratio of xanthan gum that I would add to the mix? I think I am asking that the right way. Please let me know if you need to clarify. Thank you.
