So I know it says don't bother trying to convert normal yeast recipes to gluten free but if I want to can anyone offer any helpful tips. I currently have both the cup for cup version of King Arthurs and the All Purpose. The recipe with gluten flour is as follows:
2 pkgs yeast
1 tbsp. sugar
1/4 cup water
Mix this to activate yeast
3/4 cup milk
3 tbsp. sugar
1 tsp salt
4 tbsp. butter
1 egg
add 3-4 cups of flour.
the rolls rise ones in the bowl then a second time in the muffin pans.
