Hi Sandy, we typically use xanthan gum as the stabilizer in all our gluten-free baking because it produces the very best flavor and texture. If this isn't an ingredient that you can use in your baking you may want to try experimenting with other ingredients like agar agar (use 2x the amount of xanthan gum) or guar gum (use 1 1/2 times the amount of xanthan gum).
