Thanks so much for this wonderfully helpful and interesting blog. Each of us is different with our intolerances. I've been grain free for 6 years. Now there seems to be a lessening of the severity of some of it and I feel like a novice in my baking. I noticed that nobody has mentioned using agar powder as a substitute for zanthan gum. What is your opinion on that? Jan
