If you use a standard self-rising flour, you can adjust your gluten-free flour blend by adding 1 1/2 teaspoons of baking powder and 1/4 teaspoon of salt for every one cup of flour you use. This applies to chicken or anything else you typically make with self-rising flour.
If you're going to bake with the gluten-free flour (rather than just fry chicken) you will need to also add about 1/4 teaspoon of xanthan gum per cup of flour. (This is assuming you're using a gluten-free flour blend that doesn't already have this added to it — check the label to be sure.) Making this adjustment can be tricky and provide mixed results, so instead we recommend using our Gluten-Free Measure for Measure Flour. It will make your life so much easier! All you have to do is replace the all-purpose flour in your recipe with gluten-free blend. And if the recipe calls for self-rising, just add the amount of baking powder and salt given above.
