That's a lot to work around! Your best bet is to search the site for recipes that use only coconut flour or almond flour, and experiment with small batches until you get what you like. Feel free to use dairy free milk replacers in baked goods, and you can use Earth Balance vegan butter, shortening, or coconut oil with great results.
