Hi Jenny, First, be sure you are using GF flour where called for , or GF Baking mix where called for, as they are two different animals, so to speak. The flour blend will have just flours, and no xanthan gum. The Baking Mix will have flours, fats, flavors and xanthan gum. It's like using Bisquick instead of flour. Once you have the right base, then you can follow the recipe with confidence, adding all the other ingredients called for. Hope this helps. ~ MJ
