I do not yet have health issues that necessitate a GF lifestyle. But in teaching nutrition and cooking, questions are becoming more prevalent as the health concerns that indicate GF living are on the rise in the US. A new article I read asks the question "Why do Europeans have so little Gluten Intolerance issues?" and then throws out some theories. You might find it interesting.
