Gayle, we hope Virginia shares her recipe with you, but if not you can make an easy peach "butter" simply by cooking the peach peels with the sweetener of your choice and a bit of lemon juice, all to taste. You can also add in a few whole peaches too if you want to include some of the juiciness and sweetness of the fruit.
