A wonderful Zucchini Fritatta PJ! Good recipe! Drained squash as directed, added a dash of garlic powder & oregano after cooking it. Whisked the eggs, ~1/2 c. Cheddar cheese, Parmesan cheese & sieved ( with a small tea strainer) the 2 T. flour adding a dash of Nutmeg.
Baked the frittata in an old S.S. frying pan w/o handles ~15 “ longer than the called for cast iron 10” skillet which I don’t have. Enjoyed by the family. Will make it again occasionally, it’s sinfully good. Thanks PJ
