I have always used two cookie sheets and one is dark the other gray. Forty years ago I was at my mom's friends house and she was making cookies again. Baking was her specialty. All she did was put aluminum foil on her sheet. It works great and who cares what color your sheet is. I never bake anything on my cookie sheets without aluminum foil.
