This was so helpful and answered a number of questions I had about this very subject. I was wondering what you think of silpat compared to parchment paper when baking cookies? I believe this has been addressed in several responses below/above, but a silpat tends to protect the cookie bottoms more and you might have a bit of trouble getting a golden brown color. Still, if it works and you love the results, no need to change! Always do a test cookie to see! Kim@KAF
