A friend of mine has done away with the bottom crust altogether. She just puts the pie filling directly into the pie dish, covers with a thicker top crust (usually a full crust, not a lattice or cut-out crust), and bakes. For serving, she just serves in a bowl (often with a scoop of ice cream). I guess technically this is not exactly pie--it's more like a cross between a pie and a cobbler--but there's no expectation that the filling won't be runny, and literally no one cares because it tastes awesome.
