Enid, that's interesting - apples have pectin, which does make their juice thicken naturally, and you must have hit on the right variety with those Jonathans, combined with the right baking time and recipe. Glad you found the post interesting; and now I need to seek out some Jonathans, this fall, to give no-thickening apple pie a try! :) PJH
