Great article. I love all the experimenting and insight. This is something I have struggles with as a novice pie baker. I am definitely going to try those two recommended thickeners. Especially since I promised my husband a pie a week for the whole summer! : ) Holy crusts and fillings Batman! That's a lot of pies!
