Hi, Crystal! This recipe can easily be made using our Gluten-Free Measure for Measure Flour in place of the flour called for, in the same measurements. Regarding the butter, we'd recommend using a non-dairy butter (Earth Balance and Miyoko's are two excellent brands I've tried, but there are others as well) rather than trying to substitute oil, as the consistency of the finished cake will not be impacted that way.
