Made this cake today and wasn't that impressed. I think it needs 1 more egg. And I used 1 cup of blackberries and next time will use two(there was no bubbling with my cake at all).
I baked it for the full hour and I think that was 5 minutes too long. The top gets a bit darker but doesn't brown up. So in the end, it was a dry cake around the juicy peaches and berries. That is why I would add an egg and another cup of berries, to make it really juicy.
It was good, but not great. I will try again later in the summer next time I get local peaches.
