We haven't tried using sugar alternatives in this recipe, as they tend to impart different flavors and textures than regular, granulated sugar. You're welcome to experiment with another sweetener like Splenda for Baking, but you may consider using at least half real sugar for best results (if that's a viable option for you). Otherwise, give it a whirl and feel free to share your results with us and the other bakers here who may also want to try making reduced-sugar (or sugar-free) jam at home. Good luck! Kye@KAF
