Artificial sweeteners will not thicken the jam. the gel is achieved through a complex bonding process that requires the presence of three things: pectin, acid & sugar. Sugar free jams/jellies require a specially modified form of pectin that bonds with calcium. You could use a liquid sweetener, such as honey, agave, or maple syrup, but they will impart their own flavor profile to the jam.
