My favorite of all time is strawberry lemon marmalade. I heat the lemon peel on the stove top with a little bit of water until soft, then add it to the strawberry mixture. Heavenly. Though I did this the old fashioned way, I don't see why it couldn't be used in the microwave. That does sound heavenly Mary Ellen!~ MJ
