Uh, you say that the self-rising flour has less gluten. I'd expect the substitute to be at least partly cake flour. No? Why all purpose flour? Do you just assume folks don't nec. have cake flour around? Since I have both here but don't keep self-rising around, I'd really like some guidance. Thanks a million.
